Its stainless steel knife has a Stellite alloy edge that stays sharp longer. That means it lasts 3x longer than a stainless steel knife and 2x longer than a carbon knife. It also has a 45-degree cutting plain and machine grooves on the gauge plate, carriage tray, and knife cover to ensure a smooth and even strokes. It comes in three stroke lengths and four stroke speeds, but to get a superior slice it's important to look beyond the knife. The Hobart HS series slicer also features a large product tray that securely holds the product being sliced. That means your client gets more consistent slices, higher slice quality, and yield. The removable rear-mounted meat grip assembly ensures secure product placement. And finally, a Borazon sharpening stone ensures the knife stays sharp.
