Enhance efficiency in your kitchen with this Blodgett combi oven! This mini combi oven boasts a compact countertop design to fit in even the smallest of kitchens. It features a standard 2-piece rack with 5 wire shelves to hold (5) 12" x 20" x 2" deep hotel pans, (4) 12" x 20" x 2 1/2" deep hotel pans, or 6 half-size sheet pans. This unit stores up to 500 recipes with up to 15 steps each. It is easy to use with an intuitive touchscreen control. This allows you to manually cook and fine-tune your settings or to use pre-programmed recipes for consistent results every time. It includes a USB port for recipe and data transfer and features HACCP recording and documentation.
This combi oven's cooking modes include hot air, CombiSmart, rethermalization, steaming, low-temperatureperate steaming, forced steaming, proofing, and preheating. It has a SmartChef auto cooking feature to provide presets for grilling, steaming, braising, browning, and breaded products. Simply select the desired cooking result and surface appearance. This unit includes a CombiOptima feature to automatically measure and control the humidity level in the oven. Its CombiWash automated cleaning system requires no proprietary chemicals and uses minimal water and detergent. It also includes a detachable hand shower to clean the interior.
This unit has rack timing to set individual timers for each rack. Its advanced timing also allows you to simultaneously manage multiple recipes on separate racks. For enhanced versatility, it allows for timed steam injection or instant steam at any point in the cooking cycle. Its injection steam system uses a fan wheel for even distribution in the oven chamber. This unit also features manual or auto cooling, auto humidity pulsing, and programmable vent release. Its reversible 9-speed fan offers optimal baking and roasting results, while its internal core temperate probe includes multiple measuring points for accuracy.
This combi oven includes a Hoodini ventless hood to remove smoke, odor, and moisture from the oven cavity, allowing you to place your oven just about anywhere. It features a durable stainless steel exterior and interior, and it has bright halogen lighting to illuminate the interior. It has a dual-pane tempered viewing window with hinged inner glass for easy cleaning. Its cool-touch door includes ventilated, heat-reflecting glass and a 2-step safety door latch. This door comes with a left hinge but is field reversible to a right hinge. A drip tray mounted below the door reduces the risk of wet, slippery floors. This unit requires a 240V, 1-phase electrical connection for operation.
